Pumpkin Cookies with Buttercream Frosting


I made these back in the fall for a law school potluck and they were a hit. Seriously, I still get compliments on these cookies. They were soft, not too sweet, and true to name - melted in your mouth. That being said, I have it posted below because I made a few minor changes. 

Ingredients:
Cookie:
  • 2 cups butter
  • 2 cups sugar
  • 2 tsp baking power
  • 2 tsp baking soda
  • 1 tsp sale
  • 1 tsp cinnamon power
  • 1 tsp nutmeg powder
  • 1/3 cup egg white
  • 1 tsp vanilla
  • 15oz can pumpkin pie mix
  • 4 cups all-purpose flour
Frosting:
  • 1/3 cup butter
  • 1/2 cup packed brown sugar
  • 1/4 cup milk
  • 1tsp vanilla
  • 4 cups powdered sugar
  • cinnamon power to sprinkle

here's everything ready to go:


Direction for cookies:
  1. Preheat oven to 350 degrees
  2. Prepare cookie sheet and spray with oil (I just use wax paper and spray pam)
  3. Put 2 cups of butter in a small microwave safe bowl and microwave for 30 seconds (or until softened and almost melted).
  4. Combine butter, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg in a large bowl. I started with an electric mixer which was driving me crazy so I just used a rubber spatula and mixed until combined.
  5. Add eggs and vanilla until combined.
  6. Add pumpkin until combined.
  7. Slowly add the flour. Add about 1 cup, mix, then add another cup, and repeat until all the flour is mixed in.
  8. Roll into small balls and place on cookie sheet about 1.5 inches apart. The original recipe said to do it by 1 tsp and place 2 inches apart. I didn't measure the size of the balls and estimated.
  9. Bake for 10-12 minute or until the top is set.

Directions for frosting:
  1. Place 1/2 cup of butter and brown sugar in a small saucepan and melt until smooth.
  2. Pour the mixture into a medium bowl. Add milk and vanilla.
  3. Slowly beat in powdered sugar until it reaches your desired consistency and sweetness. I used 4 cups.
  4. Wait until the cookies are entirely cool before frosting otherwise it will melt and be a sloppy glop. I put the frosting in the fridge for about an hour and frosted right before serving.
  5. Sprinkle the tops with cinnamon powder to make it look pretty.

Glittered Creations

I clearly failed with this blog over the summer. BUT I'm going to give it a shot and upload what I've worked on these past few months. This is something I did when I first moved into my apartment over the summer. I LOVE glitter (obviously) and wanted to make a bunch of things all glitterly. 

So heres what you will need:
  • Glass whatever you want glittered (I did 4 wine glasses, a candle holder and a vase - super cheap from the dollar store)
    • I ended up using the candle holder as a make-up brush holder. Post coming soon! 
  • Glitter - whatever colors you want
  • Mod podge
  • Foam brush
  • Painters tape
  • Newspaper


Directions: 
  1. Set up your work station - I worked on the floor and spread newspaper all over the floor. I also kept a vacuum nearby so I could clean quickly
  2. Using the painters tape tape off the area that you want to glitter. So I put a piece of tape at the two ends for the vase (the pink one on the right), one piece of tap on the top for the candle holder (the blue on the left), and one piece of tape at the top of the stems for the wine glasses.
  3. Using the foam brush, put mod podge on the glass where you want the glitter.
  4. Pour glitter over the mod podge. You may have to roll it around a bit and use a ton of glitter.
  5. Let this dry overnight.
  6. Using a clean foam brush, brush on another layer of mod podge. This essentially seals the glitter and prevents it from falling off/getting all over the place.
